Living in the old days? Breweries knew how to store beer in wooden barrels without imparting wood flavors. The process is still used today by the last tru wood barrel-using breweries.

The brewery is cleaned up and the prep work is done for a batch of Lazi Ji. Time for an Australian Sparkling Ale while I ponder why my neighbor has replaced the Escalade he finally fixed last night with another Escalade.

After my HB wheat I decided to have a store bought one. Spoiler: theirs is waayyy better! But, hey, they've been brewing about 979 years longer than me. I'm sure mine will be better by the time I've brewed that long.
