having a hydro sample of my drake's draconic imperial stout clone.
Fermentation temps got away from me and up to the low 70s by accident during peak fermentation.. it's at 8.9%abv and tastes good, but a little hot and green still. Needs age.

thick? That shouldnt be the case. Sounds like you got one that may have been "sick" possibly? I didnt think that could happen with just lacto.

I've been lurking... Stepped away from the brewery. Sometimes a partnership sounds better in theory than it is in reality. I wish them success though if they ever manage to open. I know quite a few people and will find a better opportunity elsewhere. In the meantime I am going to brew a bunch of experiments I have been planning. Things are gonna get a little weird, just how Billy likes it.

That's pretty funny, but the one I just had, I'd hardly consider it thick. In fact it was pretty light and refreshing

Well, obviously I stand corrected and have not had a good example of the style.

I do live in a craft beer wasteland here, of course, I've had them all at craft beer festivals, so it could have been that I was slightly inebriated or there was something else going on.

Maybe a muddling of styles, IIPA or stout coating my mouth and didn't cleanse. Either way, the only style I dumped other than Wasatch's Black O'lantern. Ugh.

I'm hoping I get to judge a style that's hard to mess up. It always sucks when you get a flight full of awful beer.
 
I'm getting there. Though I do not drink like i did in college but if i over do it, all day headache but the hair of the dog works:D
Last Saturday it didn't. I drank so much that hair of the dog felt like I was going to puke. Today it's just a headache and sleepiness. I just drank too much in a short time span. Carry that out over a full night and I would have been golden.

Tomorrow morning, eh? What happens tonight? The website lists the judging dates as both tonight and tomorrow morning.

Truth. Nothing worse than a full flight of bitters where the highest score is in the mid-20s. It's about flocc this isht o'clock. Have to go drop off dry hops to one of my Iron Brewer teammates and then it's finally beer:30.

Tonight is the first flight, for which I will not be present. I will be there for the two flights that are being judged tomorrow.

I judged that flight... at NHC first round last year.

Getting the weekend started right. I will be referring to tonight's drinking as my calibration for tomorrow's judging.

Homebrew from @PatrickGoss ... I think this was the one where a brewery gave everyone wort to brew something. We voted coffee brown and your partners overruled you? Can't remember what style you ended up doing but it tastes like a pale. Hop profile is pretty good, just a bit too far on the malty side for me. <<long sniff>> <<lip smack>> :D

What was your process and recipe?


5.75 gallon batch
OG: 1.038
FG: 1.004
IBU: 5
ABV: 4.5%
5 lbs Pilsen
3 lbs Wheat
Mashed at 148F
Boiled an hour
.10 oz Magnum @ 60 minutes
1 oz coarse ground pink Himalayan sea salt and 1 oz toasted coriander freshly ground @ 10 minutes
1 vial of WL lactobacillus delbruecki pitched and allowed to ferment alone for a few days until it starts to sour. Then pitched a packet of rehydrated US05.
It has been 5 months in the fermenter. Not quite as sour as I'd like, but still pretty good. Gose isn't supposed to be overly sour anyways. If I did it again, I'd probably try the sour mash method.

I wish someone would jump in on a string of emails and stop the nonsense. Clearly there is a disconnect and I can't say things are good when I'm being told there's no point in fixing something. Sheesh! Maybe I'm the one not understanding crap today. That is likely to be the case actually.

I haven't had good experiences with beechwood.

Of course, I'm always wearing a speed-o, so that might have something to do with me getting arrested every time I have it.
