Had gravity samples of my Brown and Berliner Weisse. The first will make a great base American Brown for the future, double checked my spruce essence concentration against the sample, and I'm good to go. Berliner Weisse sour mash was a resounding success. Plenty of sourness, and none of that nasty stuff. Just clean lactic sour. It's a week in primary (after a 4 day sour mash), and at 1.012, so I hope it'll drop further. Boiled after the sour mash, so there shouldn't be anything in there other than the Sacch strain.
