I bottle when it drops crystal clear and there isn't any sign of active fermentation.
Apfelwein question: stuff was "brewed" 3-4 weeks ago. There is still visual signs of fermentation. When do you bottle this stuff

I'm letting it go until October, including bottle time. Was just wondering when it is typically safe to bottle. For now, is in a corner if the basement, where it will sit until September.
