so got board this Saturday Morning waiting for the fiance to get out of work.... had an 2 year old Weizenbier kit from brewers best I never made. figured I mine as well use it for an experiment and been wanting to try something different. So I made a graff basically

so I took half the kit and mixed it with 12 cans of 95cent Aldies Apple Juice Concentrate.

brought 2 Gallons to Boil, added:
3.3lb Wheat LME

.5oz MT Hood at 45min boil
.25oz MT hood at flame out

I had earlier in the week threw the packet of yeast in a half finished jug of apple juice with some extra brown sugar to see if there was anything still alive after 2 years and remarkably after about a day there was a strong fermentation going. added the 2 gallon Wort and added Frozen Concentrate (partially dethawed but still mostly Ice) and Water up to 6 gallons to my Ale Pail, OG was 1.06 which was about what I wanted and between hot wart cold concentrate and water I was right at 80 degrees F so I tossed in the Yeast Starter. caped the bucked threw in the airlock and went away for the weekend lol.

well came home to a pretty vigurous fermentation last night (airlock looked like it was pretty well violated lol. cleaned that all up but excited to see how this turns out. hoping to bottle in a couple weeks. then I'm getting married and won't be back home for another 2 weeks, so I should have this waiting for me when I get home.
 
will do...had to fit a blowoff hose on it tonight. took a gravity reading and its down to 1.03 after 3 days of fermenting and tastes really good (although tons of random **** floating around it it lol.
 
fermentation seems to be done as of last friday gravity ended around 1.01, going to cold crash it as soon as a spot opens up in my fridge (currently crashing some Pee) prolly Wednesday or so and bottle when i get home from my bachelor party Sunday night or Monday (depending how crunk I get saturday night lmao). Tastes really good, really smooth and balanced and really easy to drink.
 
Bottled it last Wednesday, threw one in the fridge this morning. its good. some redsidual sweetness. something tastes slightly off, can't put my finger on it, I tasted it when bottleing and it made it undrinkable, now its much less aparent, but that was warm and flat, alot of beers are undrinkable warm and flat but may of been the 1.5 year old LME. still undercarbed so I think after I get back home in a couple weeks it will be really tasty
