Hi there,

I recently made a southern brown ale that had og of 1.039 and fg of 1.012. Right in the style guidelines. My previous brown ale had an og of 1.045 and was fantastic! I tweeked the recipe some (lowered choc malt 20% and raised c80 by 30% and also used london esb yeast) previosly I had used the british ale strain. The new beer tastes like watered down brown ale. What do you think the problem is, other than slight changes in the recipe and the yeast? I guess you shouldn't mess with a winner but I need to know where I went wrong.

Thanks -
Erok

This sounds a little like a mild ale, something I just brewed. Last month I brewed a Nut Brown which had a OG of 1.052, two 1 oz hop additions, and about 1 3/4 pounds of specialty grains. Yesterday I brewed a "Mild Ale" which is also a brown, but it had an OG of 1.032, one 1 oz hop addition, and less than 1 pound of specialty grains.

I haven't tasted it yet, but it sounds similar in terms of OG at least.
