Watermelon Cider/Mead

I'm looking to make a watermelon cider or mead this weekend and was curious if anybody has any recipes? Forgive me, I am extremely new to brewing (started in January) and would like to make something a little more sweet.

Could I just find another recipe and substitue an apple juice for a watermelon juice?

Do they make a preservative free watermelon juice?

What yeast should I use?

I'm also very new to home brewing but i would probably brew a cider recipe and add watermelon extract from Midwest supplies just before bottling and as far as the yeast goes I've heard Nottingham is good for a sweeter cider but if you use other fruit juices I've heard Montrachet is a good yeast for them, if you want a dryer cider use EC-1118 but it seems to me to be more of a wine aftertaste because it is champagne yeast, it is the only yeast I have experience with so far but it had good results.
