Watered down mead

So I've realized recently that my meads that I have been making taste a little watery. Like it were watered down. I make my meads with 14lbs of honey and top them off to 5 gallons. It seems like they should have a stronger flavour. Am I doing something wrong?

What kind of honey are you using? Different honeys have different characteristic (including mouth feel).
