A friend recently gifted me with a fair amount of Mosaic pellets for my birthday. I've been brewing SMaSH's to get back to basics and learn about my new system and water chemistry, not to mention refining my understanding of base malts and individual hops. It seems like the perfect opportunity to further my SMaSH series while attempting to clone (or at least imitate) such a great beer.
I've got a plan for everything but the water. I imagine I'll need pretty high sulfate and chloride to imitate Founder's malty hop-juice. To draw out enough of the malt character, what chloride range should I aim for? And sulfate? I intend to mash around 5.45pH and hit with an ample dose of hops following my NEIPA-inspired schedule, shooting for 5.5% and 50 IBU.
Not that it matters much here, but I'll be fermenting with WLP007 at 66, keeping it clean but still full-flavored.
