I'm getting ready to brew Northern Brewer's Pliny clone, all-grain BIAB. So far I've never made any water adjustments but am considering giving this a try.

Here's my water analysis
pH: 7.7
Na: 14
Ca: 28
Mg: 7
Cl: 21
SO4: 21
HCO3: 96
CO3: <1
Alkalinity: 79
Hardness: 99

I'm thinking of adding 1 tsp gypsum for 5 gallon batch to increase the sulfate some. Suggestions?
 
Do that and add about 4% sauermalz and you should be OK or add 1.3 mL 10% phosphoric acid for each liter of water you use or 0.11 mL 88% lactic for each mL of water to knock out the alkalinity. If you do that you can use three percent sauermalz. Thus .11 mL lactic or 1.3 mL phosphoric is equivalent to 1% sauermalz and you can use any amount of sauermalz and/or lactic or phosphoric you want as long as you have the equivalent of 4% sauermalz.
