Water cooler mash tun without ball valve?

I built my picnic cooler mash tun without a ball valve as many have done. Here is an example -

I'm curious if anyone has built a water cooler (round) mash tun with a similar style so that a ball valve is not necessary.

Bigger picture? Are you just using an inline valve and pushing the hose into OEM drain? How are you attaching the manifold/screen?

I'm trying to figure out if a simple solution similar to this can be used in a round, water cooler.

Gotcha. Looks like you would need to replace the spigot with a standard drain http://www.igloocoolers.com/Replace...lug-Non-Threaded-Triple-Snap-25-70-Quart-Size. It would be super simple, but would increase the build cost a little.
