Waiting for my Cooper diy kit to arrive.

Can I do this on the counter in my kitchen, its very close to the a/c so I can keep it cool?

You could, but I would let it ferment someplace close that is cool, but not in the direct path of the A/C blowing. You may end up with widely fluctuating temps which is no bueno for the yeast. Then again perhaps give it a shot and see how it turns out. I’m fine with being wrong.
 
Its a good idea to cover the fermentor with something dark if there is strong sunlight there as most fermenters let quite a bit of light through which isnt great unless you like skunked beer.

For batches i did in my kitchen i always chucked a towel over the fermenter to be safe as i get lots of sun on my kitchen bench.
 
Awesome. Thanks guys. Gonna do a test see how stable that corner is temp wise. Yea, I was wondering about covering it, the container isn't fully opaque.
