What's the harm if I wanted to make a 5 gallon kit with only 3 gallons? Should I reduce the ingredients or could I make a heavier brew using all of the ingredients?
 
You could reduce to 3 gallons and it'd probably work out still, though it'd be roughly 40% stronger which is a lot. The yeast may not work to that high of an alcohol %.

The taste may be significantly "off" as well, as the balance would be skewed. I probably wouldn't reduce past 4 gallons, myself, but you'll definitely still get "something" out of it :)
 
Split everything u. Half and make it 2.5 gallons. Then you can make it again later with the leftovers.
