So to make a long story short B-)

15lbs wildflower honey (local beekeeper)

3 bottles organic sour cherry concentrate from walmart.com

3 cans sour cherries (packed in water) also from walmart.com in primary.

4 cans sour cherries in secondary

Champagne yeast

Make as usual, nothing fancy. I did add yeast nutrient and energizer in 3 parts at 24-48-72 hrs.Put in Cornelius keg to age and will cold stabilize when temp drops.

I tasted before kegging and HOLY KVISIR was it GOOOOOOOD. I d can't wait, but I will.

Also did a berry mead with a large can of elderberry concentrate and a large can of boysenberry concentrate plus 15 lbs of wildflower honey, mmmmmmmmmmm. Both the blood mead and the berry mead were very pricey, but you get what you pay for.

Yes, and I would suggest an oversize csrboy, primary can be vigorous and shaking/oxygenation is a good idea

Sounds pretty awsome, so might try this too. ( am a Viking afterall ) :)

Does it come out bloody red as it suggest in the title.?

I experience that my elderberry mead doesnt leave any red colouring, but turns amber.

How long (typically) in primary/secondary/keg age?

Primary 2 weeks, secondary 2 weeks, still in keg (waiting for temp to drop below 30deg) plan on 6 months to 1yr, nice thing about keg, I can try it without opening a bottle.
