It has taken me 50 batches of beer to finally venture to a lager yeast fermentation. I made a Vienna Lager and am using WLP830 German Lager yeast. I made up a starter on a stir plate and double pitched the WLP830 per the guidelines and it is chilling down to pitching temperature now.

Based on reading Denny Conn and others I have come up with the following fermentation profile for the chamber. Does this sound about right? OG was 1.054
  • 49F for 5 days of active fermentation
  • Ramp up to 58F at 5-6 degrees/day
  • 4 days secondary fermentation at 58F
  • Ramp down to 37F at 1-2 degrees/day
  • Lager at 37F for 10-14 days
