Anyone here ever tried adding Vanilla extract or any other type of extracts to a beer before bottling? If so how did this improve the flavor and in what kind of quantities did you add this extract?

Also, how can trying this have a negative impact?

I have used blueberry and peach extract in my wheat beer.

4oz mixed into the bottling bucket is the perfect amount IMO for a 5-6 gallon batch

Vanilla is common. Amount depends on strength of the beer, but 2oz comes through loud & clear. 1oz is more subtle.

Make sure it's pure vanilla extract. That fake vanillin stuff doesn't work well with yeast & alcohol (or anything, IMO).

Pull a few samples and dose w/varying proportions to see how you like it.

The best advice when adding extract prior to bottling is to add a little at a time and taste until you get the level of flavor you are looking for. Extract flavorings are generally very strong and nothing is worse than adding too much and overpowering the flavor of your beer.

Found a syrup with splenda or sucralose as the sugar additive. Anyone know if adding this to the beer can impact the bottle process and perhaps cause a bottle bomb?
