I'm curious to hear how it goes. Tasted coconut water for the first time just recently - can't say I loved it, but there is something to it. With a bit of a buzz and a bit of carbonation, it could be nice. It's quite expensive, though, I think?

Anyways, let us know how it turns out!
 
After some more research, it looks like fermented coconut water doesn't taste all that great. So I'll probably make a plain hydromel, stabilize, back sweeten with coconut water and force carbonate. I've got some blah tasting full strength mead I can experiment with when a keg comes open. I don't think its all that expensive, Walmart has (4) 11 oz cartons for a little less than $4. They have some even cheaper, but it has water and sugar added.

I like coconut water with a little rum and some citrus. Maybe this would be along those lines!
