Well, I finally put my brew into the secondary fermenter, and wow, did that beer smell delicious on the way there....I'm really excited to taste my work, I really think this is a start of a VERY promising hobby...I'm already planning my next batch, but if anyone has any suggestions on what to cut my teeth into next I'm more than willing to hear anyone out....but for my next brew, I was planning a holiday ale, something like a Pecan Porter...

Welcome to the obsession. The best thing you can do is read up on all aspects of brewing and absorb as much information as you can, seek out a wide variety of good new beers to try, and keep that homebrew pipeline full because you'll be going through a lot of beer.

The obsession only gets worse - you'll soon have your very own beer cellar instead of the more traditional wine cellar.

As far as what to brew next - whatever you want to try - that's the beauty of this hobby. Just make sure you do your research if trying something new. For holiday beers - depending on how big and what sort of ingredients you use (i.e. spices) you should brew it asap - big, holiday beers need time to come into their own- much longer than a "simple" pale ale.

I would recommend going with beer styles you like.

I brewed dark ale and its still sitting in the crates, just few bottles gone, while almost every light beer/wheat (the style I like) I brewed, tends to dry up pretty quick.

Haha...yeah, I find myself thinking at night what can I brew next. One question though, I noticed that my brew seems kinda foggy, is that a normal thing? I'm really not that worried but just wondering if it's normal or not...Anywho, I'm going to start my next batch this week, I just need to run out and get some more bottles

Be sure to get ALL the shell pieces out of the grooves in the nuts. Even a little can cause a Tannin like bitter off flavor.
