I just finished my first all grain batch and cooled it down to about 75F before pitching. the Og was about 1.056 and i used White Labs Yorkshire Square yeast. I wanted to check on it this morning cuz I'm always paranoid when I make a brew I'm excited for. It was fizzing a lot like a can of pepsi or something. Now I can smell alcohol but I've never seen it fiz constantly like that. Is that normal or no? Maybe it's different because it's an all grain brew as opposed to a kit or partial? I put approx 750G of dextrose in it along with whatever sugars were converted from the 13lbs of grain. I topped it with just a slight amount of accacia honey to boost the sugar count cuz i was worried there wasnt enough. Any advice or consolation on this matter would be well received. Thank you.
 
Sounds like things are going great, if you get too concerned just run you a blowoff tube from the airlock and stick the other end in a jug of water.......
 
Alright just wasn't 100% sure. Guess i'll just let er be for a month and see what the outcome is like

Actually, is there a specific smell that the specific recipe would have. I can't quite place my finger on it but it sort of smells like a dry alcoholy taste and not malty as i would have assumed.

What matters is the finished product. Make that assessment once you have a finished, fully carbonated adult beverage. I have had some fermentations that smelled like a rhinoceros farted into a bag of dead cats and the beer came out spectacular.

True.When I was making my pomegranate wheat ale, I went to inspect the fermentation and i got a whiff of sulfur. Choked and cried in an instant. Smelt like someone crapped their pants and flung em in the corner. Pretty nice beer tho
