So I have two empty 5 gallon carboys. What should I make? I already have a braggot going (Otter LME and orange blossom honey), 5 gallons of orange blossom Mead, and 5 gallons of cider. What should be next?

Another possibility might be some apfelwein, so that you can compare it to the cider that you're making.
