Hey guys, I brewed up what was supposed to be an Vanilla Oak Porter with an OG of 1.058 about 4 days ago. After a serious screwup by my partner picking up the grain bill(an extra 4lbs of 2-row), we ended up with a seriously thick mash and consequently a 1.080 OG wort. I ended up pitching the packet of Ringwood ale yeast in and then ran to the LHBS to get another
all out. So I decided to see what would happen.
4 days later, bubbles are around 2 minutes apart and it's down to 1.018. Was surprised it even got that far! The taste so far is a little thin, sweet, very alcoholic and a little bitter(from chocolate and black patent malts). Unfortunately, not thick rick porter I was hoping. It's young I know, but it has no viscosity.
I planned to let it sit in primary for another week or so and then rack onto an ounce of oak cubes for a week, then add a vanilla bean or 2 soaked in vodka until it tastes right. I'm worried that with those additions won't work well with this beer anymore. Maybe with a thicker richer brew, but this is lighter and way boozier.
Any suggestions to bring this beer to life in secondary?
