Quick question - what size tubing will fit over 1/4" MPT threads?

(I tried searching, but couldn't find a readily available answer)

You do not want to connect tubing to threads. You need either a swivel nut or hose barb to attach to those threads. The size of the barb will determine the size of tubing you can use.

Also, what is this for?

Ideally, yes - I'd want a barbed fitting. But the place I'm ordering from doesn't have a 1/4" mfl to 3/8" barb adapter, and I'd rather not pay double shipping. They do have a 1/4" mfl to 1/4" mpt, so I was curious what size tubing would fit over 1/4" mpt threads.

This is just for a draft line recirc build, so I'm not worried about a slight leak or gunk in the threads. I figure if 3/8" tube will fit over those threads, I'll throw a clamp on it and call it good.

You can get a brass hose barb at Home Depot for a couple dollars. I would go with that, personally.
