I put this together myself rather then brew off of someone elses recipe. Let me know what you think and what I messed up.

Thanks

½ lb carapils
½ lb crystal light

1lbs honey
3.00 lb Extra Light Dry Extract (3.0 SRM)
2.00 lb Wheat Dry Extract (8.0 SRM)
8 oz. clear candi sugar 15 min

1 oz perle at 60 minutes
.1/2 oz Bitter Orange Peel
.1/2 oz Coriander
1/2oz Hallertauer (4.8%) 10mins
1/2oz Hallertauer (4.8%) 1mins

SafeBrew t-58

I would just go with all wheat extract and leave out the Candi sugar, crystal and carapils. The honey looks fine. When using spices I just use a bittering hop so the spices don't have to compete with flavor/aroma hops. But I don't see the Hallertauer having an adverse effect with the spices.

I would agree ^. I would also cut the coriander to .25oz it's pretty potent

10 min - orange
5 min - corriander

Does that sound right also per JRems suggestion I was going to tone down the corriander.

I believe that wheat extract is actually 50% wheat and 50% barley so +1 on going with just wheat extract

Is there something that doesn't taste well with the beer? Or are you looking for suggestions to make it better?

I am just looking for suggestions before I brew. I am planning on starting this Sunday, I will keep you filled in as I move along. Should I use a secondary fermenter or just the primary? I was thinking 2 weeks in the primary and one in the secondary with a week for bottling how does that sound?

You're fine with just the primary. My starting primary length is 3 weeks. I'll run out of beer so it may get cut short sometimes but that's what I shoot for. The biggest problem I see with people using a secondary is moving it too quick causing to beer to never finish out. It's usually easier to say you don't need a secondary.

my $0.02

A bit hoppy for a honey wheat (IMHO)...I only say this because I like my wheats very low hopped. Agree with the 100% wheat DME...it will probably be 60/40 or 50/50 anyway (barley/wheat). Definately drop the candi. Looks yummy!!
