I came across a very good deal on a GDM-07 and am planning on using it for a ferm chamber.

What is the safest option for controlling fermentation? Self built BrewPi or Inkbird controller?

I have a BrewPi partially completed per this thread, with only the relay board and the sockets left in the build.

I would like to build the BrewPi as an independent piece of hardware and not incorporate it into the fridge unit itself. Plug both the fridge and heater into the BrewPi and let it manage the temp by cycling power. I'm not electrically inclined so I'm a little hesitant here, will the GDM have too big of a draw for the parts listed in the BrewPi build? Should I just use an inkbird of some kind to simplify it? I'm not too concerned with logging or step control over safety.

I'm afraid of burning down the house instead of fermenting beer here.

I have a GDM 12 controlled with a BrewPi. It's incredibly easy - there's a power cord going from the fridge to the compressor so you can leave the fridge plugged in all the time and it only cools when the BrewPi tells it to. How you control the compressor power cord is up to you, but I just spent a few bucks on a power tail:
