Hi all,
Not sure if this is even a problem, just wanted to post a picture and get people's thoughts on it. i brewed a Saranac IPA clone that is pretty darn tasty through the first few bottles, but I hadn't had it in clear glass until tonight. It has a weird, bread-like coagulated head on the otp of my beer. It tastes great and really hasn't been affected by it, but I'm just curious what has caused this and what any sort of scientific/pseudo-scientific explanation :) can be given? I did swirl around the yeast and pour in ala Belgian or Bavarian wheat style. I assume that is what caused this (picture attached) but I love more details on what exactly we are looking at.

whoa! am I to think this is top-fermenting yeast that has persisted since 4/14 when it was brewed??!

I'm in NYC and the temperature has fluctuated in my small pre-war-building apartment, so I know I have flocculation problems, certainly in the last 6 weeks when we have had 80 degree nights in our apartment.

Yeast problems, right? And save installing central air in my entire building, not much I can do, right?
 
How Lon did it ferment for, how long in the bottle, what yeast was used, did you hit your FG?

This appears to be yeast kraeusen that never settled out.
 
It looks like yeast kraeusen like doboman says maybe you should put them in the fridge for a week or so and see if they settle out and pour easy as not to churn up the settlement on the bottom of the bottle.
