OG-1.080
Final-1.020-28
Potential Alcohol 7-8%

10 gallons:

21 pounds English pale malt
3 pounds English crystal malt
8 pounds thistle honey
3 good sized handfuls of norhtern brewer hops or 2 smaller hand fulls of galena
3 handfuls of cascade
3 handfuls of BC Goldings
3 handfuls of Kent Goldings
A dash of irish moss
1 quart thick yeast slurry of london ale yeast
1.5 cups sugar for priming

1. Mash malt at 154-156 for 1 hour stir occasionally

2. Lauter to collect 12 gallons and bring to a boil, add the honey

3. Add 3 handfuls of Northern Brewer hops for 75 min

4. Sometime around 30 mins add 3 handfuls of Cascade hops

5. Between 15 and 30 mins throw in 3 handfuls of BC Goldings hops

6. prior to ending boil add a dash of irish moss
