I can't find any info on this. Can i use my beer gun to transfer a beer with 4 vol of CO2 into bottles only rated up to 3? I would think it would be be fine since fermentation is done and the beer is already carbed. Am I wrong?
 
The pressure is created by the presence of CO2, not the act of fermentation. Fermentation creates CO2, and the CO2 causes pressure. At 80°F 3.0 volumes of carb will create a pressure of 48 psi. 4.0 volumes will create a pressure of 69 psi. "You've got to ask yourself one question: 'Do I feel lucky?' Well, do ya punk?"

You can do it providing the beers ALWAYS stay chilled. Note what Doug said about the pressure at 80F. Temperature makes more of a difference to pressure than volumes of CO2. Having said that, IME you'll struggle with using a bottling gun with beers at 4 volumes (although it is a bit beer dependent).
