Hello,

I'll be doing my first 90 minute boil this weekend because I'm brewing a Hefeweizen that has Pilsner malt in it.

The problem is, my kettle isn't large enough for a 90 minute boil so I was planning on just gradually adding volume back to the kettle so I can boil for 90 minutes.

My questions are:

Can this have any ill effects on the beer?

When people top up the boil, do you just use water or do you sparge a little extra and top it up with wort???

you can top up during a boil with no problems. just pour the water in no need to sparge. it may slow or stop the boil temporarily depending on how much water you add but don't worry.
 
lodovico, what part of buffalo area you hail? no one but buffalo folks like sabres so have to live or be from the area right?

It is said that over sparging, past .099, can lead to bitterness in your wort from tannins. Tannin extraction increases with pH. In all-grain brewing wort pH typically rises during the last stages of wort collection and is one of the factors letting the brewer know that wort collection should be stopped. It is best to top off with water.
