Hey everyone! I'm brewing up a Kolsch tomorrow and I'm using Wyeast Kolsch Ale yeast. I am plannng another brew the following week and need the same yeast. Has anyone successfully collected and stored yeast at high krausen? Please advise...
Do you just simply skim the krausen off and place it a mason jar with sterilized water? How much do I need?
