Ok I brewed and bottled a batch of cider that is way to sweet. I don't want to just dump it out but no body will drink it in my family. So I am looking for options of things to do with it. First option I thought of is use it as headspace filler and just sweeten less then I would like it normally. Second option would be to apple jack it but I am not sure if the sugar will carry over to the apple jack. Anyone got any ideas or can answer my concerns above?

Water it down before you drink it..
 
Using yeast will not do very much since I use Splenda to back sweeten and it was a little sweet when I back sweetened and bottled but as it aged it became overly sweet.
 
mix it with something tart, like cranberry, cherry, or pomegranate. you'll dilute it as well as add a contrasting flavor, it'll balance out the sweetness a bit to the point where it should be drinkable, hopefully.
 
Or simply make an identical batch, only don't backsweeten the second batch but add the sweet batch to the dry batch. That will cut the sweetness in half.
 
Don't want to sound like a know it all, but cider isn't brewed, there's no brewing involved at all. But what to do with overly sweet cider? I agree w BSmith, above, but I'd make a really dry cider maybe identical, maybe not, and when its done just blend in the glass as you drink it. WL cider yeast will produce a nice dry cider.
Other options include using the overly sweet cider as a cocktail mixer or try mixing it by the glass with some not sweet beer. Good Luck and Happy cider making & Beer brewing :mug:
