Has anyone ever had success after adding too much bourbon to a barrel-aged stout?
I accidentally did that last year, it ended up tasting like a bourbon bomb, but I have left it in the keg for the last 12 months, and am wondering if there is any possibility the bourbon mellowed out.
Obviously can't know for sure without cracking it open!

Can't happen! Worse case, you get Stout flavored bourbon.

The beer will change flavor and may complement the bourbon better, but I doubt the bourbon flavor will mellow.

The bourbon should have mellowed after all this time. I tend to overdose my rum or bourbon additions on purpose because of this.

Yep I agree with this. Barrel ageing definitely mellows with time.
