I just got done reading all 53 pages worth of information in this thread:

https://www.homebrewtalk.com/showthread.php?t=341219&page=53

Basically its a 110V 2.5 gallon ebiab using one heating element with recirulation and temperature control. I am about to dig into my build but i had one question in regards to pot size. I originally planned on doing 5 gallon batches, but have been leaning towards starting with smaller batches (2.5-3 gallon) since I'm a noob and I'm really the only beer drinker in the house so I dont need a full 5 gallons worth.

Problem is I purchased a 12-gallon pot pre-drilled for recirculating and now I'm concerned the pot might be too big for small batches with the small amount of wort. I would need to keep the grains set pretty low in the pot which would make it much closer to the heating element.

I know I will have to adjust my final mash size due to the large surface area at boil off, but will there be any other issues I might run into?

Thanks in advance!

I don't think you will attain enough depth of wort to succeed with 2.5 gal batch. No problem though, brew 5 gallons and either split batches or enjoy that you have 2 cases ready to drink.
Also take note that 2 cases of brew is not much considering that you have a 6 week cycle. I started with 5 gallon batches and now doing 10 gallon batches. For the first time I have 4 different beers to drink or offer guest.
