Hey everyone, I apologize in advance if this has already been addressed. I couldn't find anything though. I brewed an IPA last night and The fermentation appears to be going great. It was staying around 66 degrees. I changed the ice packs in my swamp cooler after work today around 4:00 PM EST. I just checked it and it is at 62 degrees. I removed the ice pack and left my carboy in the water. It was a bit cooler here today (around 70). I am wondering if I should take my carboy out of the water. I have it fermenting in my basement which stays around 68. I used Danstar Nottingham yeast.

Let others chime in but my basement is cooler than that and my brewing works fine. My estimate is 64 to 67 degrees.

Your fine even at 62! Danstar Nottingham yeast is my personal fav and it works great all the way down to 55 degrees, it will take a bit longer at lower temps but no worry's about 62 at all!

You are fine at 62, not to mention that active fermentation adds around 5 degrees to the beer temp. So in reality you really should keep it lower than 65.

62 is the temperature in the carboy. I have a thermometer on it. My basement is at 68, it stays pretty constant there.
