So I did a Barleywine back 2 months ago. I split the batch into two 6g carboys. 1 is down to 1.025 which is tasting pretty amazing! The other one only got down to around 1.037 and it's way too sweet. It's been at that FG for about 3 weeks now so it's not going anywhere. I used wlp099 SD super strain, but the Safale 05 tastes much better at the 1.025. Oh well.
My question is.... I have a 1L starter of Brett Brux I was going to build up even more, but should I transfer the one still at 1.037 into a 5g glass carboy and dump some of the brux into it and let it ride for 6-8 months?
I was going to do a 1g trial of barleywine/brux but now with it dying out, I figured, why not the whole thing... I guess I could do a 1-1.5L starter and throw it into the 6g carboy to see if it will eat it down abit more but I doubt it will do much more than a few points.
Any thoughts?
