To sulphite or not?

If I don't sulphite my mead will it turn to sherry? I am making sure it is up to the neck of the carboy in secondary. When I eventually stick it in the bottling bucket should I sulphite it?

When I rack it for the 2nd time should I? What do we all do here?

I have a pyment and a show on the go.
 
If you dont sulfite it then you can find out later whether you should have. Beerbrewers typically dont sulfite their meads while more winemakers do. WVMJ

I always use sulfites now. When I 1st started in this hobby, I wanted to keep things as pure & natural as possible, so I didn't use sulfites. I learned the hard way that sufites can protect mead from many things. 1 of my melomels developed a lactic bacteria infection, sulfites saved it. No such luck on the oxidized mead & cyser; I had to pour them down the drain. Simply using sufites at the beginning and at every other racking would've prevented the oxidation. Honey ain't cheap & neither is the fresh pressed juice/sweet cider. I put too much time, effort & money into mead/melomel/cyser to pour it down the drain.

I have yet to use any sulfides. After 60 + gallons I still have not had any problems. The mead that I make is the only alcohol that I can drink that won t give me a headache. I don t know if there is a valid connection or not but I plan on sticking to what works for me.
