Brewed a barley wine. Was in primary for 3 weeks. My estimated FG was 1.027. Mine came out to 1.030. Trying to nudge it along a bit more, I sprinkled a packet of dry yeast on top and closed it for a week. Check it today (a week later) and... NOTHING.

You think I should rack it to secondary for bulk aging?

If so, here is the plan: Rack to secondary and age for six months. Then bottle for six more months. Then drink! :rockin:

I don't think this thing is going to budge. I have heard of using champagne yeast but don't really want to do that.

Here are my estimated gravities :

OG 1.106
FG 1.027

Here are my actual gravities:

OG 1.100
FG 1.030

So what do you all think?

your beer is more than likely done. yeasts have a fermentation RANGE not a specific number. brew calculators take a midpoint in that range and use that when calculating FG. so consequently real life will almost always be a little off. as long as the SG is stable go ahead and start aging.

I agree. Worst that can happen is you'll lose a little gravity during secondary but not get a yeast cake on the bottom.

If it is stuck, racking it to the secondary could be exactly what it needs to get moving again, I have run into that quite a few times.
