Do you age your beer in bottles or your fermenter? I know there are a lot of people who keg here. So I'm talking home brew.
 
I have had more success in bottles with aging. Most of my beers hit their peek around 3 months after bottling. Plus an empty fermenter mean time to brew more beer :)
