Sooo. I tried toasting oats today as per recommendations (20-30 mins at 375 in the oven). 8 mins in i see smoke and part of the batch is dark dark (assuming burned and beyond toasted). Smells more like dirty laundry on fire than cookies.

Any recommendations? Lower temp/duration, or is it supposed to be like this?
 
I did a second batch, reducing the heat to 280. Better results... Golden brown consistency, with no burned parts. The smell is certainly not akin to warn cookies though. Smells aweful actually. I'm worried this smell may transfer over into the final beet flavor. Any thoughts?
 
Let them sit for a week or two to mellow, allowing those smell/flavor compounds to dissipate... You will impart those flavors in your beer if you brew with them too soon

After roasting , let them age for 1-2 Weeks .

Thanks for the reminder. I'll have to toast 8 minutes or less then, as i recall from my experiment yesterday the mild nutty aroma happened very quickly and before any significant colouration. Unfortunately, I planned to brew today, so I'll have to chance not doing the 1-2 week aging.
