So I started a brewhouse IPA on June 16th that I played with a little bit. First I uses re hydrated US-05 instead of the packaged yeast. Only added about 5 liters of water instead of topping up to 23L which gave me on OG of 1.065 @ 18C. Since it took a little longer for the yeast to kick off I let it sit around for a week. Once it chilled out around the 24th. I racked to a secondary and dry hopped it with about 2oz's. I kept the temperature pretty consistent throughout the whole period. I was planning on priming Tuesday or Wednesday (about day 20 with the hops in for about 12 days) but just checked it for ****s and giggles and my gravity is at 1.006 with a consistent temperature giving my 7.7-8% beer. Its still pretty cloudy (didnt use irish moss in the beginning) and there isnt that overly vegetated taste for over hopping just a nice citrus IPA taste. Should I rack now or wait a few more days. I want to avoid moving the carboy as much as possible since it takes for ever to settle.
