So I started a brewhouse IPA on June 16th that I played with a little bit. First I uses re hydrated US-05 instead of the packaged yeast. Only added about 5 liters of water instead of topping up to 23L which gave me on OG of 1.065 @ 18C. Since it took a little longer for the yeast to kick off I let it sit around for a week. Once it chilled out around the 24th. I racked to a secondary and dry hopped it with about 2oz's. I kept the temperature pretty consistent throughout the whole period. I was planning on priming Tuesday or Wednesday (about day 20 with the hops in for about 12 days) but just checked it for ****s and giggles and my gravity is at 1.006 with a consistent temperature giving my 7.7-8% beer. Its still pretty cloudy (didnt use irish moss in the beginning) and there isnt that overly vegetated taste for over hopping just a nice citrus IPA taste. Should I rack now or wait a few more days. I want to avoid moving the carboy as much as possible since it takes for ever to settle.
 
I would say go ahead and rack to a keg or bottle it now. You aren't getting any drier than 1.006. Some of your cloudiness is likely due to the hops, but it will clear with time. You can also chill your beer then add some isinglass or gelatin, to fine, if you want. It isn't necessary, though.
 
Cheers, that's kind of what I was thinking. Never dry hopped before. Pretty much sealed my day when I moved the carboy to the counter where I rack from. Got it stirred up a little so it has to sit until tomorrow. I really need to build a tiered system to stream line everything.
