Time untill boil?

I just started my first batch. I felt it took a while to get it to (small) boil before adding the DME. I am boiling 3gal in a 30qt stainless, using an electric stove with the pot spread over 2 eyes. Now I have been waiting 10 minutes after adding the extract and it is not back to a boil yet. The temp is about 205-210. Am I screwed?

No, it should get there eventually! You can cover it for a bit, to help get it up to a boil, and then remove the cover once it starts boiling and then starting the timer.
 
I have a related question concerning late extract additions. When you do late extract additions do you:
1. continue timing your boil when your wort returns to a boil (e.g. at 15 min add extract, boil takes 10 minutes to return, at which point your timing continues 14...13...12...)

or

2. does your timing continue as if you did not lose the boil when you added the extract? (e.g. at 15 min add extract, boil takes 10 minutes to return, at which point your timing is at 5...4...3...)

I've been using version #1, but am thinking that the temperature drop is insignificant enough that hop utilization, etc continue on schedule.

I just add the extract at flame out, and it solves all the problems! but yes, you only count the minutes the wort is boiling as the boiling wort is when the hops oils are isomerized.
 
I was kinda wondering about the boil time as well, I read to put my wort chiller in my wort at the 50 minute mark to sanitize it, well I did and my temp. dropped like 15* so it took 15 minutes to get to boiling again so I went over my 60 minute mark by 15 extra minutes was this a smart thing to do?

Bump, because I'm wondering the same thing.
 
yes you will be fine... late addition just sanitizes last bit if extract but won't carmelize it like a full boil. ends up NOT darkening your beer like a full boil might. last few minutes will be fine . I usually add anywhere from last 15min to flame out.
