I'm of the opinion that nearly all of my bottled brews require about 4 months post bottling to begin to reach their peak of flavor perfection. The only style for which this may not hold true for me is highly hopped IPA's. What have you observed in this regard?

Edit: I must preface this by stating that most of my brews of late have been ESB style ales to Eliot Ness style lagers. The longest I ever waited for a brew to mature to perfection was with a Wee Heavy Scotch Ale that required at least 8 months to reach peak flavor. Perhaps this was due to my use of molasses in the recipe.

I don't think I've kept a beer in a bottle for 4 months with exception to my big oaked beers. Haha. I have been kegging for 3 years and sometimes bottle off the keg if I want to get my next beer on tap. Maybe I'll try to wait 4 months and see how it is next time I bottle some.
Back when i bottle conditioned I always thought 4-5 weeks was good but i doubt i ever got past 2 months.

Mine generally improve a lot over the first 2-3 months in the bottle, then they continue to get better very slowly for at least a couple months after that.

Of course they are drinkable much earlier, but a little aging is usually worth the wait.
