Got a Scottish 80/- in the primary about two weeks now and was going to hop up my brown ale recipe to approximate a Janet's Brown version, but got to thinking about the time of year and time it takes to age good beer, etc. I will not have enough funds to brew more than one a month and I wonder if I should put the brown on hold and go with my dunkel hefeweizen instead to have it ready by May. Both are extract with specialty grains and I just can't decide. What say ye?
