I'd be careful about any additions that bump the bitterness significantly given that it's an extremely pale, low gravity ale. If you want more finishing hops maybe add a hopstand addition after partly chilling, or up the dry hop.

Hmmm ... was suspicious the "smash" looked similar to an American-style Pilsner and I was right.

It's just a wee tad hoppier than the BJCP version ranging from 22-40 IBU. Brewer's Friend shows your recipe at around 48 IBU for a full boil 5 gallon batch, but that's if your Simcoe hops average in right at 12.7AAU.

It looks like an American Session Ale. It sounds like you want an American Session IPA, or extremely hoppy pale ale.. I typically use far less hops in most of my APAs than a lot of people do.

If you just want a Session Ale that one looks very good as is. If you want a really hoppy ale - add some more. That is the beauty of home brewing, you can adjust to your preferences.

Alright, getting ready to brew this batch this weekend! It's been a long time coming. I'm harvesting my home grown Cascades this weekend. Do you guys think that adding 1oz of dried, whole hop cones to the dry hop would be a good addition to this beer or do you think it would take away from it? I'm also wondering about splitting up the times of the dry hop. Maybe do the Simcoe dry hop 5 days into fermentation, let that go for 3-5 days, then do the Cascade dry hop... Not entirely sure.

Additionally, I'm not planning on secondary with this, even though the recipe says to do so. Would you agree?

Lastly, if I can do a full boil with this, would you still do half extract at start of boil and then a late extract addition 15 mins before end of boil with the rest? Or does it not matter now with a full boil?

Thanks guys.

KH - This might be a question for another thread, or perhaps a PM, but can you give me a few more details? I'm trying to come up with a basic, no-frills APA that is leaning toward malt-forward and restrained in hops...IBUs around 30, 33 tops. I was considering Glacier, Cascade or Chinook - possibly a combination, but nothing too elaborate. Your thoughts would be appreciated.

I would be inclined to add something in the hopstand instead of the boil.

Denali or Idaho 7 would be great choices.

Add 2 oz of either or one of each once the wort reaches 170°F

Mandarina Bavaria would work well

an ounce each of Eldorado and Mosaic would be wonderful.

Thanks ProblemChild. I was trying to use my fresh hops so I was hoping that either cascade or chinook would compliment the simcoe.

And I agree, I definitely would add them during a hopstand or a dry hop. Going for some hoppy aroma.

So you don't think chinook or cascade would be a good compliment?
