Thermostat Problem?

Summit Kegerator: SBC490-BI. Will not shut off. Just keeps getting colder and colder until total freeze up. Replaced the thermostat twice just in case I had gotten a bad one. (Haier RF-7350-77). Even turned all the way down to lowest setting just keeps freezing up. I have heard that these particular Thermostats require adjustment. #1. do not know how to adjust. #2. seems to me that it should not need adjusting right out of the box.

Anyone ever had this problem and is there anything else I might check?
 
Start relay stuck closed?

If this is a mechanical thermostat (bulb and capillary) there will be a "coarse adjustment" screw likely hidden under a label.
You can use that to shift the working range up or down. Some folks have used that ability to shift their chest freezers up to "refrigerator" temperatures...
