Your image is way too small to read, but a 10k NTC (negative temperature coefficient) sensor is a thermistor not a thermocouple.

Looking at the Omega website, though, it appears that this model does not have the capability to read a thermistor. As far as I've noticed, none of the PID controllers commonly used for homebrewing do.

A pt100 RTD is my sensor of choice in terms of accuracy and reliability. Thermocouples tend to degrade more quickly and require specialized connectors constructed out of special conductive material whereas an RTD can use any multi-wire conductor and connectors.
