Thermocouple troubles

to set up in my HLT with a PID. I was getting some whacky results, and I realized it's not a submersible thermocouple. What thermocouples do other people use? Would a weldless thermowell work? If so, which one? Thanks!

Is their any wiring junctions in the thermocouple leads?, if you extended the leads with copper wire every additional junction will contribute to/subtract from the thermocouple output.

For what it is worth I use a Nanmac type t thermocouple probe

I bought k type thermocouple wire off ebay. I cut a length, twisted the two wires together on one end and was good to go. It is very accurate with my PID. Cheap, too. I put mine in a thermowell made of copper tubing with one end soldered shut.
