Yes I was! Whisky and lambic and ipas!Were you at the Alvinne Craft Beer Fest in 2012? I feel like I met you there... If I didn't, just ignore me, that day became pretty fuzzy... Anyways, I'd be down to join in a tasting (if I can get that day off) and I can bring some whiskey.
That's the problem. They need to hit a homerun out of the park or people might not ever come back. By launching with only classic styles... it's risky. Not saying Christine & Co can't do it, but there's not any margin of error.Nostalgia will probably boost their sales initially, and hopefully they can supplement with new and exciting products to ride the wave.

The big question is: is there still a giant Witbier market in Austin?
Biggest competition:
Witbier - Independence White Rabbit. I've had this one on tap in our bar and it sells mediocre. But just like most Independence beers it's kinda middle-of-the-road. (512) also makes a Wit, but I get the impression it's not one of their most popular taps (barely see it on draft walls).
Bock - Going against Shiner Bock... ugh. I dunno, man. The only other local "craft" brewery that makes one locally is South Austin Brewing, and that blows, so there's that? South Austin is barely on tap anywhere in town besides their brewery.
Grand Cru - Kind of a "dead" style in US beer. No one knows what this is (I mean, I do, but Joe 6 Pack is gonna need to get educated... do we have time to educate him?)
Frankly I don't know the answer to that question right now. It's possible she's going to knock this out of the ******* park, but the style choices she's making these beers need to be 100% on-point and 100% world class (similar to Live Oak in quality).
Cautiously excited? Just being realistic. But really, with these "classic" styles, they can't make a single misstep.
I could tell you at least 1 store that still had the Michigan-produced stuff last year here in Austin, lol.I saw several Celis 6 packs dated 2009 at a bottle shop in Lake Charles today. No pics cause my phone was dead but there were several and most of the 6 packs were faded.

Not sure if it's still there, but 8 years is a ton of time for something to sit around. I'm assuming the 6-packs you saw were also not refrigerated?

For those interested in the numbers: The 12-pack of Two Hearted was canned 2/7/17.well...that was earlier than expected!
Preserving Pierre Celis’ legacy extends to many of the beers that Celis Brewery will have on tap, including Celis White and Celis Grand Cru, two of his most well-known beers. The Celis White will even be made with the same original Belgian yeast strain that he carefully preserved for many years, even after losing the rights to his Austin brewery.
“It’s been 17 years without the Celis White as he made it, as I have not had the one with the original yeast strain,” Christine says. “It’s such an important component of the beer.”
But when visitors come to Celis Brewery in its first month being open, that beer probably won’t be available just yet. She says she wants to launch with a trio of IPAs — a Belgian-style IPA and two New England-style IPAs — and have Pierre’s original brews debut in the following month or two, “to give (people) a reason to come back to the taproom,” she says.

I'm going to be in Dallas/ Arlington this weekend. I'm not at all familiar with the area and looking for some recommendations. I guess I would like some beer but I'm more interested in food spots.
We are staying near Six Flags Friday night thru Sunday morning.
