All of my beers are in boxes, stacked away from a window. The temperature in my house fluctuates from 55-70 throughout the year. I've had zero issues aging beer this way for 17 years.

Beer is more resilient than people give it credit and, as long as you're running an AC, you should be more than fine.

Just my two cents.

I haven't been storing beer as long as you, but I've had no issues with the bottles I've kept in room temp for a few years either. Might slow down the infection process for those bottles that are or will be infected. But that doesn't always work. I've been lucky with a good amount of infected bottles!
 
Okay, so say I stick with room temp, what’s a good shelving system for that? Thinking it’s gotta be metal because other shelving types have buckled under the weight.

Check out Home Depot or Walmart’s website. I got a metal one that fits inside a double-doored closet that is has 4 shelves, with a claimed max of like 800 pounds per shelf, so I have them filled with no sign of them sagging. The only thing I had to add was a string to each level to keep them from sliding off in case the big one hits

Why do you need shelving? All it's going to do is expose each bottle to light...

Just put them in boxes, number each box and create an Excel or Sheets file to document which bottles are in each box.

Easy peezy.

Metal **** shelving, like the Trinity product line Costco sells, is perfect: plenty strong, adjustable, and fairly cheap. You can also order edge rails.

Just don't use the casters!

Boxes and lists are great too, but it's also nice to organize your beers in a more visible and accessible way.

Boxes are free, of course. Can't beat that.

I even used the printers at work to print out letters on 4x4 labels to keep things organized in my garage cellar. Living in a townhome with a west facing garage has its advantages as the garage never goes above 75 even in the middle of summer.
 
Breaking from #TalkRoy to say that Bacon and Eggs is ******* magical

I actually didn't care for my first can for some reason but I've enjoyed the last two.

In my best Seinfeld voice: What’s the deal with Stone IRS? Is it back but renamed Totalitarian or is it a different beer?

They tweaked the recipe a bit. Last time I stopped in they had 2014 IRS on draft. So damn good.
 
I meant on draft, before they ever considered canning it.

Maybe it's because the first time I had B&E like nine years ago, I was still relatively new into beer and anything north of 7% was WTF territory for me.

That's an OB beer. They haven't been open that long.

Checked: Untappd added it 11/13/10, so closer to 7 years than 9, but we all know you are loose with your dates ;-)

Untappd also launched in October of 2010.

But you're right, OB opened in 2010, so like seven or eight years ago.
