Like maybe kick the DME down to 2# instead of 3#? I was considering doing that. I guess I'd like to be between 6% and 7%. Not crushable, but not double. Is there a user-friendly online calculator for such things?

I might tone down the hops and drop at least 1 oz of Simcoe, maybe both. I had wanted to use Northern Brewer and Southern Cross, which is generally lower-alpha than Simcoe, but my LHBS didn't have any Southern Cross.
NM. I found a recipe calculator. So.. assuming an efficiency of 75%, dialiing the DME down to 1.5# would land me in the neighborhood of 6.5%, so maybe I'll give that a go. Thanks.
 
well that's what I was thinking, back down on the DME, otherwise you have two and it's going to be like a smack in the head! Then I was thinking, hey maybe that's what he's going for...and sometimes that's what the day calls for.

Talking about calculators, once I started tinkering around with recipes I got one of the real popular apps but it was too complicated for me. Found a real simple app (BrewMe) calculates fermentables and IBUs, without having to know a whole lot of other stuff.
 
The spruce is loose!

Took a gravity sample today. 3 days in, 1.014 and falling. Not much spruce aroma, but you can really taste it! Nice color, too. The clarity should improve as fermentation wraps up.
